Based in Texas, Nick Cichella serves as operations manager of LSG Sky Chefs, where he manages a fleet of trucks. He schedules vehicles and drivers on a daily basis, while ensuring that all internal food production processes are maintained to the stringent standards of airlines. Nick Cichella has also successfully implemented best lean manufacturing practices for food production and assembly.
Mr. Cichella previously held responsibilities as food safety and quality assurance manager with Fresh From Texas, LLC. He oversaw the auditing and training of employees and managers, with a focus on maintaining adherence with FDA Food Safety Modernization Act (FSMA) rules. He also undertook shelf-life studies and oversaw corrective and preventive actions, ensuring that the company fully met USDA certification requirements.
From 1998 to 2007, Mr. Cichella as operations manager with LSG Sky Chefs at Simon Bolivar Airport in Caracas, Venezuela. He coordinated quality assessments by local authorities and airlines, as well as the LSG Hygiene Institute. He joined the Austin operations of LSG in 2018 as food safety and quality assurance manager, assembling and training a food safety team. Investigating all reported food-borne incidents, he oversaw microbiological testing on a regular basis.
